Chipotle Bean and Mushroom Rice Bowl

Ingredients

  • 1 pack Bens Original Rice (Any type)
  • 1 can Beans (Black beans, Pinto, Kidney, etc) – drained and rinsed
  • 1 cup vegetable or chicken broth
  • 1 can mushrooms, diced
  • 1-2 canned chipotle peppers in adobo, chopped
  • 1 tbsp oil or butter
  • Salt, pepper, and other seasoning as preferred
  • Optional toppings: Chopped cilantro, avocado, cheese, or lime.

Instructions:

  1. In a saucepan, heat oil or butter. Add mushrooms, and sauté for 2-3 minutes until fragrant
  2. Stir in the chopped chipotle peppers, beans, and adobo sauce. Cook for 2 minutes to blend flavors
  3. Pour in the broth and add the rice (if its ready, add it in however if it is uncooked, simmer until tender and then add in)
  4. Let everything cook together for 5-10 minutes on low, stir occasionally, until heated through and slightly thickened
  5. Add salt, pepper, or other additional toppings and serve in bowls!
