NEW Recipes Stuffed Bell Peppers

Ingredients

Peppers

  • 3 bell peppers
  • 2 tbsp cooking oil
  • 1 1/4 salt
  • 1/4 black pepper

Servings: 6

Filling

  • 1 lb sausage or vegetarian plant based alternative (you can also use ground/ plant based beef, turkey, etc)
  • 1 yellow onion
  • 3 garlic cloves
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 cup marinara sauce
  • 1/2 cup long grain white rice
  • 3/4 cup chicken or vegetable broth
  • 1 cup mozzarella cheese

Instructions:

  1. Preheat oven to 160°C. Wash and dry each bell pepper then cut the bell peppers in half horizontally. Carefully cut and remove the stem from the top half of the bell pepper (its okay if there is a small hole).
  2. Place each bell pepper half in a oven dish and brush the bell pepper with 1 tbsp oil and season with 1/4 salt and 1/4 tsp cracked black pepper. Bake the peppers in the oven for 20 minutes, after 20 minutes remove from the oven and set aside.
  3. While the bell peppers are baking, make the filling. Heat a large skillet over medium heat, add 1 Tbsp of oil and brown the sausage.
  4. Once browned, add the diced onion and minced garlic to the skillet. Sauté over medium heat until onion is translucent and garlic is fragrant.
  5. Then, add the uncooked rice, marinara sauce, italian seasoning, garlic powder, 1 tsp of salt and chicken/ vegetable broth to the skillet. Stir until combined.
  6. Place a lid on the skillet, turn the heat up to medium-high and allow the mixture to come to a full boil. Once boiling, reduce the heat to medium-low and allow for the mixture to simmer without removing the lid for 20 minutes. After, turn the heat off and let it cool again without removing the lid for 5 minutes.
  7. Remove the lid, fluff the rice and stir the mixture again. Fill each pepper with the filling and stuff as much you can until it has reached the top.
  8. Top each bell pepper with shredded mozzerella cheese and losely place aluminum foil over the top of the dish you are baking the peppers in. Bake for 15 minutes!
  9. Once done, remove the foil and turn the heat on to broil and broil the stuffed peppers for 2-3 minutes or until the cheese gets brown on top. Be sure to watch the bell peppers closely to prevent the cheese from over browning.
  10. Lastly, if needed garnish with parsley!
