Ingredients
- 1 pack Bens Original Rice (Any type)
- 1 can Beans (Black beans, Pinto, Kidney, etc) – drained and rinsed
- 1 cup vegetable or chicken broth
- 1 can mushrooms, diced
- 1-2 canned chipotle peppers in adobo, chopped
- 1 tbsp oil or butter
- Salt, pepper, and other seasoning as preferred
- Optional toppings: Chopped cilantro, avocado, cheese, or lime.
Instructions:
- In a saucepan, heat oil or butter. Add mushrooms, and sauté for 2-3 minutes until fragrant
- Stir in the chopped chipotle peppers, beans, and adobo sauce. Cook for 2 minutes to blend flavors
- Pour in the broth and add the rice (if its ready, add it in however if it is uncooked, simmer until tender and then add in)
- Let everything cook together for 5-10 minutes on low, stir occasionally, until heated through and slightly thickened
- Add salt, pepper, or other additional toppings and serve in bowls!
