
Ingredients:
- 2 Tablespoons Vegetable or Canola oil, divided
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 pound Ground beef, or Plant based Ground beef (vegetarian option)
- 1/15 ounce can white beans, rinsed and drained
- 1/15 ounce can kidney beans
- 1/15 ounce can pinto beans
- 1/28 ounce can chopped tomatoes with juice
- 2/15 ounces can tomato sauce
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 2 bay leaves
- 2 teaspons kosher salt
Instructions
- In a sauté pan on medium heat, place one tbsp of oil and sauté onions for 3 minutes.
- Add minced garlic and sauté for another minute until the onions start to caramelize and remove and place in a crock pot or a large pot on the stove
- In the same pan, add another tbsp of oil and sauté the ground or plant based beef for 5 minutes, breaking down the beef with a wooden spoon until it is cooked through and most of the juice has evaporated.
- Add cooked beef and remaining ingredients to the pot and stir to combine
- cover and cook the chili for 30 minutes to 1 hour
- Top with bread, chopped green onions, sour cream, or cheese!
