Four Bean Chili Recipe

Ingredients:

  • 2 Tablespoons Vegetable or Canola oil, divided
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 pound Ground beef, or Plant based Ground beef (vegetarian option)
  • 1/15 ounce can white beans, rinsed and drained
  • 1/15 ounce can kidney beans
  • 1/15 ounce can pinto beans
  • 1/28 ounce can chopped tomatoes with juice
  • 2/15 ounces can tomato sauce
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 bay leaves
  • 2 teaspons kosher salt

Instructions

  1. In a sauté pan on medium heat, place one tbsp of oil and sauté onions for 3 minutes.
  2. Add minced garlic and sauté for another minute until the onions start to caramelize and remove and place in a crock pot or a large pot on the stove
  3. In the same pan, add another tbsp of oil and sauté the ground or plant based beef for 5 minutes, breaking down the beef with a wooden spoon until it is cooked through and most of the juice has evaporated.
  4. Add cooked beef and remaining ingredients to the pot and stir to combine
  5. cover and cook the chili for 30 minutes to 1 hour
  6. Top with bread, chopped green onions, sour cream, or cheese!
  7. Enjoy!
