What is vermicelli? Vermicelli is typically made from rice. It is very easy to use. Here’s how you typically prepare it:
1. Soak or briefly boil: Most rice vermicelli cooks very quickly. Then, drain and rinse with cold water to stop the cooking process.
2. Use in dishes: Once soft, you can use rice vermicelli in many ways:
- Stir-fries: Add the softened noodles to the pan near the end and toss with vegetables, meat, or sauce (e.g., pad see ew–style or Singapore noodles).
- Soups: Put the soaked noodles directly into hot broth. They heat through in seconds.
- Salads: Great in cold dishes like Vietnamese bun bowls—add noodles, herbs, vegetables, and dressing.
- Spring rolls: Use the softened noodles as a filling along with veggies, herbs, and protein.
